BACON CHEESEBURGER MEATLOAF
This bacon
and cheese meatloaf takes comfort food to a new level! Even the biggest
skeptics of meatloaf will love it! It is perfect as a weekly meal or can be
prepared in advance for individual frozen meals!
INGREDIENTS
- 1 egg
- 2 teaspoons olive oil
- 3/4 teaspoon salt
- 1/4 cup ketchup
- 1/4 cup panko breadcrumbs
- 1/2 teaspoon pepper
- 1/2 cup onion finely diced
- 1 tablespoon worcestershire sauce
- 1/2 cup cooked and crumbled bacon
- 1 tablespoon yellow mustard
- 1 tablespoon chopped parsley optional
- 1/2 cup cheddar cheese cut into small cubes
- 1 1/4 lbs ground beef I use 90% lean
- cooking spray
INSTRUCTIONS
First, preheat
the oven to 350 degrees. Line a baking sheet with aluminum foil and coat with
cooking spray.
Then, heat
the olive oil in a small pan over medium heat. Add the onion and cook for 4 to
5 minutes or until golden. Remove from heat and stir in mustard and
Worcestershire sauce.
In a large
bowl, combine the onion mixture, beef, bacon, panko breadcrumbs, salt, pepper,
egg, 2 tablespoons of water and cheddar cheese.
Mix until
homogeneous.
Form 4
individual meatloaves and place on a prepared baking sheet. Spread 1 tablespoon
ketchup on each meatloaf.
Bake for 20
to 25 minutes or until cooked through. Sprinkle with parsley if desired, then
