Asian salmon and noodles








Salmon and Asian noodles is a simple, elegant and appetizing dish. Sear the salmon, then finish under the grill, for a magnificent color and a deep flavor. Sautéed vegetables and fettucini make it a complete meal with every bite.

Ingredients

Ingredients for Asian noodles:

  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sesame seeds
  • 1/4 cup honey
  • 5 green onions chopped
  • 1/4 cup chicken stock
  • 1 tablespoons olive oil
  • 10 button mushrooms , sliced, or 1 Portobello mushroom, sliced
  • 1 teaspoon Sriracha sauce , substitute with any other hot sauce if you don't have Sriracha
  • 2 cups snow peas ends trimmed (about 60 snow peas)
  • 1/2 lb pasta preferably Fettuccine (half a pound)

Ingredients for Asian salmon:

  • 1 pound salmon
  • salt & pepper
  • 1 tablespoon soy sauce
  • 2 tablespoons cooking oil
  • 1 tablespoon honey

Instructions

Asian noodles:

First, heat the cooking oil in a large skillet over medium heat. Add the chopped green onions and sesame seeds and sauté for 2-3 minutes. Add the sliced mushrooms and cook for another 2 minutes over medium heat. Remove pan from heat and add soy sauce, honey, chicken broth, sesame oil, sriracha - mix well to combine.

Then, in another saucepan, boil the snow peas 3 to 5 minutes until they are tender but still crunchy. Drain.

In another large saucepan, bring the water to a boil and cook the pasta 10 to 12 minutes or more (depending on the instructions on the pasta) al dente. Drain.

Add the drained snow peas and pasta to the vegetables and sauce in the large pan with the vegetables from step 1. Mix everything well and heat everything over medium-low heat.

Asian salmon:

First, preheat the grill. Heat a large skillet over high heat. Generously season the salmon on the skinless side with salt and pepper. Add oil to the hot pan: the oil should sizzle. Add the salmon to the pan with the skin side down (skin side up) and sear for 4 minutes, moving the fish around the pan to make sure the oil covers the surface of the fish and the fish does not stick to the pan during cooking.

Then, after these 4 minutes, turn the fish over on the skin side and sear for another 3 minutes over high heat. After you've burned on the skin side, you can actually remove the skin from the salmon at this point and discard it if you don't like to eat it.

Mix honey and soy sauce, heating it a bit in the microwave or on the stove to soften the honey. Brush the salmon with the honey-soy sauce. Place the salmon under the grill for 3 minutes, being careful not to burn the salmon. Brush with more sauce in the middle of the grill, if desired. Grill for 3 minutes in total until the top of the salmon is a little charred.

At this point, the salmon is ready to serve. Or, you can keep the salmon covered until you're ready to serve. If your salmon is a little undercooked in the middle, keeping it covered for several minutes before serving will also allow the salmon to continue to cook and it will be perfectly cooked and will not be dry when you are ready to serve!
