ZUCCHINI NOODLE STIR FRY WITH CHICKEN
This easy
and healthy stir fry can be on your table in 30 minutes!
Ingredients
- 1 tbsp ground ginger
- 1/4 cup tamari
- 4 chicken thighs trimmed of fat and cut into cubes
- 3 scallions chopped
- sesame oil for pan
- 3 tbsp garlic chopped
- 1 cup sugar snap peas
- 2 tbsp hoisin sauce gluten-free if necessary
- 1 pepper sliced
- 2 zucchini spiralized
- toasted sesame seeds for garnish
Instructions
First, whisk
the first four ingredients for the stir fry sauce in a small bowl and set
aside.
Then, heat a
skillet over medium-high heat and add 1 tablespoon of sesame oil.
Add the
chicken and cook for about 5 minutes or until it is cooked or slightly pink,
stirring often. Add a few tablespoons of stir fry sauce and stir quickly.
Remove the
chicken to a bowl and set aside.
Heat another
tablespoon of sesame oil in the pan and add the split peas.
Cook for a minute
then add the peppers, green onions and noodles to the zucchini. Add a few
tablespoons of the stir-fry sauce and stir, cook for about 5-7 minutes.
Return the
chicken to the pan and add the rest of the stir-fry sauce. Cook for another
minute.
Serve with
toasted sesame seeds and green onion for garnish.
