SPINACH AVOCADO CHICKEN BURGERS






These avocado and spinach avocado chicken burgers are the ultimate healthy burger. They are full of healthy fats, protein and even hidden vegetables. Eat them on a weekday evening or serve them in a backyard barbecue.

INGREDIENTS
  • 1/4 Cup Breadcrumbs
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Sea Salt
  • 2 Tablespoons Organic Fresh Cilantro, finely chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Ground Pepper
  • 1/2 Cup Organic Spinach, chopped finely
  • Juice from 1/2 Organic Lime
  • 1/2 Organic Avocado, diced small
  • 1 lb. Organic Ground Chicken
  • 1/4 Cup Gruyere Cheese (or Havarti), shredded

SECRET HONEY MUSTARD SAUCE:
  • 1/4 Cup Honey
  • 1/4 Cup Mayonnaise
  • 1/8 teaspoon Paprika
  • 1 Tablespoon Apple Cider Vinegar
  • Sea Salt and Pepper to taste
  • 1/4 Cup Dijon Mustard
  • 1/4 teaspoon Cayenne Pepper

INSTRUCTIONS

First, for avocado mayonnaise, mix all ingredients in a blender on high speed until smooth. Put aside.

Then, prepare a grill or a grill pan and put on high heat. Add avocado oil to the broiler pan if using.

Mix the ground chicken with the seasonings, spinach, coconut flour, lime juice and avocado oil until well combined.

Gently fold in the avocado slices, being careful not to break them.

Form the chicken into 4-5 burgers, spacing the avocado apart to make sure it is evenly dispersed.

Grill the burgers on the grill surface (using extra avocado oil if you fry them in a pan) for about 5 minutes on each side, or until the internal temperature reaches 165 F.

Garnish with optional avocado mayonnaise and serve in lettuce cups like a bun, or enjoy burgers alone. Happy Cooking Time.
