Ingredients
  • 2 eggs
  • 2 tablespoons butter
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 4 teaspoons dijon mustard
  • 6 tilapia fillets defrosted if frozen
  • lemon slices for serving

Coating
  • 1 cup cornflake crumbs
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon each salt & pepper
  • 1 1/2 cups Panko Bread Crumbs
  • 1/2 cup fresh grated parmesan cheese

Instructions

First, in a small bowl, combine the eggs, Dijon mustard and water. Mix well and set aside. In another dish, combine all the coating ingredients.

Then, dip each tilapia fillet in the egg mixture and then in the breadcrumb mixture. Make sure to press the crumbs into the fish and make sure it's completely coated.

Once all the fillets are coated, preheat the butter and olive oil in a pan over medium heat.

Place the coated fish fillets in the pan and cover with a lid. Cook for 3 minutes. Turn the fish over, cover again and cook for another 3 minutes.
Serve with fresh lemon slices. Happy Cooking Time.
