Mediterranean Baked Halibut
Make this
easy halibut recipe with green beans and cherry tomatoes in 25 minutes! It
cooks in a tasty Mediterranean style sauce with citrus, olive oil, fresh garlic
and spices.
Ingredients
- 1/4 tsp dried oregano
- 2-3 tbsp mayonnaise
- 1 tbsp fresh basil, chopped
- 2 garlic cloves, minced
- 2-3 tbsp sundried tomatoes, chopped
- 1 lb wild caught halibut
- Optional: dash of red pepper flakes
- olive oil, kosher salt, and fresh pepper to taste
Instructions
First, preheat
oven to 425 degrees F. Mix chopped sun-dried tomatoes, mayonnaise, garlic,
oregano and red pepper flakes (if applicable).
Then, coat a
small baking sheet with a drizzle of olive oil and place the fish on top, skin
side down. Sprinkle a little bit of kosher salt on the fish. Spread the mayonnaise
/ tomato mixture on top of the fish.
Bake at 425
for 15-17 minutes. My fish was about 1 1/2 "thick and took 15 minutes.
Remove from the oven and garnish with chopped fresh basil.
