MARINATED CHERRY TOMATOES







MARINATED CHERRY TOMATOES






Marinated Tomatoes - healthy tomatoes marinated with olive oil, balsamic vinegar and herbs.

Ingredients
  • 1 lemon juiced
  • sea salt to taste
  • 1/4 red onion sliced thin
  • 1 TBSP red wine vinegar
  • 1/4 cup quality extra virgin olive oil
  • 1/2-1 clove garlic smashed and minced into a paste
  • 1/2 pound ripe cherry tomatoes quartered
  • freshly ground black pepper to taste
  • optional fresh basil

Instructions

First, quarter your cherry tomatoes and cut the onion into thin strips.

Then, using the flat side of your knife, mash the peeled garlic and chop it into a paste. Season with a pinch of salt and add to a bowl with your vegetables.

Add olive oil, vinegar, lemon juice, freshly crushed black pepper and fresh basil if you have it! Mix to coat the tomatoes and let stand at room temperature for 1 to 2 hours, sitting occasionally. Taste at room temperature and don't hesitate to adjust salt and pepper to taste.

These marinated tomatoes are absolutely fantastic as a summer salad garnish that also serves as a vinaigrette! Serve with leafy greens, homemade croutons and all your favorite blends. It is also incredible on grilled crostini as an aperitif and goes very well with avocado toast! The possibilities are limitless.
