Creamy Cabbage Soup







Creamy Cabbage Soup is a super simple slow cooker soup recipe that's perfect for back to school!

Ingredients
  • 2 carrots sliced
  • 2 tablespoons butter
  • 3-4 cups cabbage chopped
  • salt & pepper to taste
  • 1/3 cup butter
  • 3/4 lb potatoes diced (about 2-3 medium)
  • 2/3 cup onion chopped
  • 1 stalk celery sliced
  • 1 cup milk
  • 1/3 cup all-purpose flour
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh dill
  • 1 lb smoked sausage sliced
  • 3 tablespoons fresh parsley

Instructions

First, cook the sausage, onion and butter until the onion is tender. Add celery, carrot, potato, cabbage, broth and salt and pepper to taste.

Then, bring to a boil. Reduce heat, cover and simmer 10-15 minutes or until potatoes are tender.

Meanwhile, melt the butter in a small saucepan. Stir in the flour and cook over medium heat for about 2 min. Add milk and cream and stir until smooth. Continue whipping until thickened and bubbling.

Once the vegetables are tender, add the cream mixture to the soup. Simmer for 5 minutes.

Remove from heat and stir in dill and parsley.
