BLACK MAGIC CAKE






BLACK MAGIC CAKE






Your friends and family will love this beautiful, simple, sweet chocolate cake. The Black Magic Cake has a great chocolate flavor, perfectly sweet and incredibly easy to prepare.

Ingredients
  • 2 large eggs
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 teaspoons baking soda
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 3/4 cups flour stir very well before measuring (220 grams)
  • 2 cups granulated sugar 390 grams
  • 3/4 cup extra dark unsweetened baking cocoa or Dutch processed
  • 1 teaspoon baking powder
  • 1 cup hot brewed coffee

Favorite Chocolate Frosting
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 2 tablespoons of buttermilk or sour cream
  • 1 cup plus 2 tablespoons natural style cocoa powder
  • 4 1/2 cups confectioners' sugar sift or aerate before using.
  • 12 tablespoons of unsalted butter softened
  • 6 to 8 tablespoons of half and half or a mixture of cream and whole milk

Instructions

First, preheat oven to 350 ° F. Grease two 9-inch round cake pans and line with circles of wax paper or parchment. Grease again and sprinkle with flour.

Then, in a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda and salt.

Make a well in the center and add the eggs, oil, buttermilk and vanilla. With a sturdy scraper, stir the mixture, scraping the dry mixture from below to make sure it is incorporated. Add the hot coffee and stir until it is thick and well mixed. With an electric mixer, beat at medium speed for about 30 seconds or until well blended.

Divide evenly between 2 cake pans and bake on the central grill for 35 minutes or until the cakes come back to the touch. Let the cakes cool on a wire rack for about 15 minutes, then carefully invert and allow to cool completely.

To make the icing, mix the softened butter, half the sugar and the cocoa powder in a large mixing bowl. Stir until it is mixed, it will be thick and pasty. Stir in vanilla, then continue adding sugar, stirring until very thick. 
Add the buttermilk and stir, then continue adding the milk and stirring, scraping the bowl often, until it is slightly creamy. Now start beating, adding more milk if necessary, until it is smooth and creamy.

Level the cake if you need to (although it bakes fairly evenly), then spread the cakes with frosting and stack. Happy Cooking Time.
