BEEFY CORNBREAD CASSEROLE
The
coranbread casserole is an excellent meal to prepare for the whole family. The
cheeseburger pan recipe is economical and feeds a lot of people. I fed two
teenagers, my husband and myself and we had leftovers. It's a good meal.
Ingredients
- 1 ⅓ cups water divided use
- 2 cloves garlic minced
- 2 lbs ground beef
- 16 slices pickled jalapenos
- 1 16 oz jar salsa
- 1 14.75 oz cream style corn divided use
- 1 small onion diced
- 2 6.5 oz packets Martha White Yellow Cornbread Mix divided use
- 2 cups shredded Mexican-style cheese
Optional
toppings:
- salsa
- pico de gallo
- sour cream
Instructions
First, preheat
the oven to 425 degrees F. Spray a 9x13 baking dish with Crisco non-stick
cooking spray.
Then, in a
large skillet, brown the ground beef with the onions and garlic. Drain the
excess fat.
Return to
pan and stir in salsa.
Prepare a
package of white Martha's white cornbread mix with ⅔ cups of water. Mix well
then add ½ can of corn to the cream.
Mix well
then pour evenly into the prepared baking dish.
Spread the
ground beef mixture on top of the cornbread mixture.
Prepare a
second packet of Martha's White and White Cornbread Mix with ⅔ cups of water.
Mix well then add ½ can of corn to the cream. Mix well then pour evenly over
the top of the ground beef mixture.
Garnish with
grated cheese. Then evenly place slices of marinated jalapeƱo on top.
Cover with
aluminum foil and cook for 15 minutes.
Then remove
the aluminum foil and cook for another 10 minutes.
Slice and
serve with sour cream, pico de gallo or salsa!
