APPLE PIE CUPCAKES







You will find all the wonderful flavors of an apple pie in these apple cupcakes with brown sugar cinnamon pie. This recipe is super simple because we used a store bought cake mix and also a store bought pie filling.

INGREDIENTS

APPLE FILLING
  • 1/4 tsp. salt
  • 1 tbsp. fresh lemon juice
  • 2 tbsp. unsalted butter
  • 1/2 tsp. ground cinnamon
  • 2 tsp. all-purpose flour
  • 3 tbsp. granulated sugar
  • 3 medium apples, cored, peeled and diced small

CUPCAKE
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 2 large eggs
  • 1/2 cup whole milk
  • 3/4 cup granulated sugar
  • 2 tsp. vanilla extract
  • 1 1/2 tsp. baking powder
  • 1 1/2 cups all-purpose flour
  • 3/4 cup (170g) butter, melted 170g butter, melted

CREAM FROSTING
  • 1 tbsp. sour cream
  • 2 tbsp. powdered sugar
  • 3/4 cup heavy cream
  • Cinnamon for sprinkling

INSTRUCTIONS

APPLE FILLING

First, combine apples, granulated sugar, lemon juice, cinnamon and salt in a medium bowl.

Then, melt the butter in a medium saucepan over medium heat and add the apple mixture and cook, stirring frequently, until the apples are tender and the liquid boils, about 6 minutes.

Add the flour and stir until the liquid thickens.
Remove from heat and allow the filling to cool completely.

CUPCAKES

First, preheat the oven to 350 ° F.

Then, line a 12-cup muffin pan with paper cups.

Whisk together the flour, baking powder, cinnamon, nutmeg and salt in a medium bowl.

In another bowl, beat sugar and eggs until light and creamy.

While continuing to beat, gradually pour in the butter, then the vanilla. Then add half of your flour mixture, then your milk, then the rest of the flour, making sure to beat well after each addition.

Divide batter evenly among molds of prepared muffin pan. Top each with a bunch of apple garnish.

Bake for about 20-25 minutes or until a toothpick inserted (around the edge) comes out clean.

Let the cupcakes cool in the box for a few minutes, then transfer them to a wire rack to cool them completely.
FROST CREAM

Beat the heavy cream, powdered sugar and sour cream in a medium bowl until the mixture forms firm peaks.

Transfer to a pastry bag fitted with your favorite tip and pour a swirl of frosting on each cupcake.

Sprinkle with cinnamon. Happy Cooking Time.
