VEGETABLE SAMOSAS
You can
prepare them ahead of time and freeze them for a quick snack anytime! Also a
great option for children's school lunches.
Ingredients
Dough
- 1 1/2 teaspoon salt
- 1 1/4 cup warm water
- 1-2 tablespoon granulated sugar
- 3 cups all purpose flour plus more as needed
- 3- tablespoon ghee Clarified butter or oil
Filling
- 3 tablespoons oil
- ½ large onion chopped
- 1 teaspoon ginger grated
- 1 teaspoon minced garlic
- 1 teaspoon curry powder
- 1 1/2 cup frozen peas thawed
- 1/4 teaspoon
- ½ teaspoon pepper sauce or chili sauce
- ½ -3/4 pound potatoes cubed and boiled
- cayenne pepper
- ½ teaspoon smoked paprika
- 2-3 tablespoon parsley or cilantro
Instructions
Filling
First, in a
medium to large skillet, add oil, onions, garlic, ginger and sauté for about
2-3 minutes, stirring constantly to avoid burning.
Then add the
curry powder, pepper sauce and paprika and continue to stir with a large wooden
spoon, about 2 minutes.
Add the
boiled potato cubes and peas. Lightly mash the potatoes and peas then mix well
until the ingredients are well mixed, add a little water to avoid burns. Simmer
for about 2 minutes. Finally add the coriander, adjust the seasoning, to taste.
Remove from heat and let cool. You can prepare this a day in advance.
Dough
First, in a
large bowl, add the flour and make a well, then add the sugar and salt.
Followed by water, ghee or oil.
Then, knead
to form a soft, sticky dough.
Place the
dough on a floured board and knead for about 5-7 minutes.
Continue flouring the
dough as needed to facilitate kneading. Be careful not to overdo it. The dough
should be soft, elastic and smooth.
On a lightly
floured surface, form the dough into 16 balls.
Roll the
dough using a lightly floured rolling pin; cut it in half. Spoon a generous 1-2
tablespoons of filling in the center of a semicircle; lightly moisten the edges
of the dough with water or flour dough, using your finger. Fold the end over the
filling to form a triangle, then continue to fold the strip into triangles, as
you would with a flag. Continue with the rest of the dough. Place the samosas
on the tray.
In a large
saucepan, pour the vegetable oil until it reaches at least 3 inches) and place
over medium heat until the oil reaches 350 degrees.
When you're
ready, gently place a few samosas at a time in a saucepan.
Fry for a
few minutes until the underside is light brown
Turn over
and fry for a few more minutes until the other side is light brown.
Use a large
spoon or something to remove it from the oil. Repeat the process until the end.
Better serve hot with this pepper sauce.
