CHOCOLATE CHIA PROTEIN PUDDING
This
chocolate and chia protein pudding is so creamy and velvety that it's hard to
believe you're eating something healthy. Try it with your favorite healthy
toppings for breakfast or with a creamy coconut whisk and chocolate chips for a
decadent but nutritious dessert. It's also a great snack on the go!
Ingredients
- 1/3 cup chia seeds
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1 cup coconut milk carton refrigerated kind
Instructions
First, sift
the cocoa powder into a mixing bowl at medium depth. Add the maple syrup,
vanilla extract and a pinch of salt. Whisk to combine until smooth.
Then, add
coconut milk on top and whisk to combine. Pour the chia seeds on top of the
mixture and whisk to mix once more.
Cover and
refrigerate until the mixture thickens and becomes pudding, at least 4 hours,
or preferably overnight.
Delicious
with fresh coconut whip cream and berries, if desired.
