Paleo Magic Cookie Bars
These Paleo
and Vegan Magic Cookie Bars are a healthier remake of the classic dessert! You
will never know that they are gluten free, cereal free, dairy free and refined
sugar free!
Ingredients
For the
coconut milk caramel
- ½ cup coconut palm sugar
- ½ teaspoon vanilla extract
- 2 tablespoons coconut butter
- 1 (15.5 oz) can full fat coconut milk
For the bars
- ½ teaspoon sea salt
- ¾ cup dark chocolate chips
- ½ teaspoon cinnamon
- ¼ cup coarsely chopped almonds
- 1 cup (96g) almond flour
- 3 tablespoons coconut butter melted
- ½ cup coarsely chopped walnuts
- ½ cup unsweetened flaked coconut
Instructions
For the
coconut milk caramel
First, in a
thick saucepan, heat the coconut milk and sugar over medium heat, stirring
often, until the coconut milk begins to boil. Lower the heat to simmer and
reduce from 1/3 to 1/2, stirring often to prevent the sugar from burning. (If
thicker caramelized sugar starts to form on the sides or bottom, use a whisk to
re-incorporate.) When it reaches a consistency similar to thick sweetened
condensed milk or dripping caramel sauce, in about 30 minutes , add 2
tablespoons of coconut and vanilla butter. Mix well and remove from heat. You
should end up with just over a cup of sweet caramel-colored coconut milk.
For the
crust / bars
First, preheat
the oven to 350 ° F and line an 8 x 8-inch pan with parchment paper, then
lightly grease with coconut oil.
Then, while
the caramel is simmering (make sure to continue stirring every few minutes),
mix the almond flour, cinnamon, salt and coconut butter.
Sprinkle the crust
mixture in the prepared baking dish. Using your fingers or a spatula, press the
mixture into an even layer, covering the bottom of the baking dish.
Sprinkle the
chocolate chips, chopped nuts and coconut flakes evenly over the crust. Pour
the sweet coconut milk evenly over everything. Bake for 25-30 minutes, until
lightly browned.
Let cool in
the refrigerator for about an hour or until completely cooled and set. Cut into
16 squares with a sharp knife.
