LEMON PEPPER SALMON

INGREDIENTS

SALMON
- 2 lemon wedges
- salt, to taste
- 1.5 teaspoons lemon pepper
- 2 5-oz. salmon filets
- lemon zest, for garnish

BROCCOLI
- 1/2 tablespoon olive oil
- salt and pepper, to taste
- 3 cups broccoli florets
- INSTRUCTIONS
- First preheat the oven to 400 ° F.
Then prepare
the salmon by placing a double piece of paper towel on a large plate. Place the
salmon fillets on top of the paper towel, skin side down, then place another
piece of paper towel on top. Use your hands to press the paper towel into the
salmon to remove as much moisture as possible.

a large cast iron pan (a baking sheet works too!) With a cooking spray, then
place the salmon fillets on top, skin side down.

to taste and place a lemon wedge on top.

prepare the broccoli by cutting it into medium-sized florets. Place the
broccoli around your salmon fillets and drizzle with olive oil. Then season
with salt and pepper.
Cook the
cast iron skillet at 400 ° F for 12 to 14 minutes or until the salmon is cooked
