OLD FASHIONED MILLION DOLLAR PIE
RECIPE
This easy,
no-bake pie is perfect for potlucks and vacations because you make it in
advance! The creamy, decadent filling is full of pecans, coconut, pineapple and
cherries chilled in a sweet crumb crust.
INGREDIENTS
- 1/4 cup lemon juice
- 1 cup sweetened shredded coconut flakes
- 1 can sweetened condensed milk
- 1/2 cup pecans, chopped plus more for garnish
- 9 oz 2 extra helping graham cracker crust
- 1 can (20 oz) crushed pineapple in juice, drained very well
- 8 oz container frozen whipped topping, thawed
Optional
- maraschino cherries for garnish
- 8 oz whipped topping for garnish
INSTRUCTIONS
First, drain
the pineapple in a fine mesh colander before you start, pushing as much juice
from the pineapple pieces as possible with your back or a spoon. Put aside.
Then, in a
large bowl with a hand mixer or whisk, beat the sweetened condensed milk with
the lemon juice until it thickens slightly.
Fold the
thawed whipped topping in the sweetened condensed milk and lemon juice until
well combined.
Add the
crushed pineapple, grated coconut and pecans to the bowl. Fold the ingredients
with a large spoon or spatula.
Once all the
ingredients are well mixed, pour the pie filling into the Graham cracker crust.
Smooth the top and cover the pie with the plastic pie crust lid.
Place in the
freezer and freeze overnight.
About an
hour before serving, spread the second container of whipped topping on top of
the pie. Garnish with maraschino cherries and chopped nuts if desired.
Alternatively
to make Hawaiian Million Dollar Pie add 1/2 cup maraschino cherries to the pie
filling ingredients.
