LEMON GOOEY BUTTER COOKIES






Thick, fluffy and tasty describe these delicious lemon sticky butter cookies. Made from scratch, a cake mix option is included below!

INGREDIENTS
  • 1 egg
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup powdered sugar
  • 8 ounces cream cheese softened
  • 1/2 cup butter softened (1 stick)
  • 1 box lemon cake mix (I use Duncan Hines lemon supreme)

INSTRUCTIONS

First, cream the butter and cream cheese in a blender until smooth and creamy. Add the egg, lemon juice and lemon zest; mix until homogeneous at low. Add the lemon cake mix in three parts, mixing just until combined after each part.

Then, refrigerate the dough for 2 hours.

Roll into 1 inch balls and roll through the powdered sugar. Place on cookie sheets lined with parchment paper.

Cook 10-12 minutes at 350 degrees. Let cool for 2 minutes then remove on cooling cookie racks. When the dust is completely cooled with more powdered sugar. Happy Cooking Time.
