INSTANT POT CORNED BEEF AND CABBAGE







A tender supper of corned beef and cabbage, infused with the light flavor of lager beer and hot pickling spices.

INGREDIENTS:
  • 1 cup beef broth
  • 1 medium onion, sliced
  • 1 pound new potatoes
  • 3 cloves garlic, chopped
  • 3 large carrots, cut into 3-inch pieces
  • 2 tablespoons whole grain mustard
  • 1 (14.9 ounce) Guinness beer
  • 2 tablespoons chopped fresh parsley leaves
  • 1 head Savoy cabbage, cut into 2-inch wedges
  • 1 (3-pound) corned beef brisket, plus pickling spice packet or 1 1/2 tablespoons pickling spice
  • Kosher salt and freshly ground pepper, to taste

DIRECTIONS:

First, rinse the breast with cold water and dry well.

Then, place the onion, garlic and marinating spices in a 6 quart Instant Pot®. Gently place the breast on top of the onion mixture. Garnish with beer and beef broth.

Select the manual setting; set the pressure to high and set the time to 85 minutes. When cooking is complete, release the pressure according to the manufacturer's instructions.

Remove the chest from the Instant Pot®; Keep warm. Remove and discard the onion mixture, reserving 1 1/2 cups cooking liquid in the Instant Pot®.

Stir in potatoes and carrots; garnish with cabbage. Season with salt and pepper according to your taste.

Select the manual setting; set the pressure to high and set the duration to 4 minutes. When cooking is complete, release the pressure according to the manufacturer's instructions.

Thinly slice the corned beef against the grain and serve with potatoes, carrots and cabbage, garnished with mustard and parsley, if desired. Happy Cooking Time.
