Creme Brulee Cookie Bars
These easy
to make Creme Brulee cookie bars are a great addition to your holiday cookie
list. A rich, creamy cookie is placed on a vanilla sugar cookie crust, then
topped with pieces of sweet caramel.
INGREDIENTS
- 3 large eggs
- 3/4 cup 149g granulated sugar
- 1/4 teaspoon salt
- 1 1/4 cups 155g all purpose flour
- 1/2 cup 113g unsalted butter
- 12 ounces about 2 cups or 350g white chocolate chips
- 1 cup toffee bits
- 1 tablespoon 15ml Vanilla Extract
INSTRUCTIONS
First, heat
the oven to 350 ° F. Line a 9x9 pan with aluminum foil and spray with cooking
spray. Alternatively, you can use parchment paper that has been sprayed with a
non-stick cooking spray or greased with butter or shortening.
Then, place
the butter and white chocolate chips in a medium saucepan over low heat. Melt
the two together, stirring almost constantly, until they are melted. The
mixture may appear curdled or have the consistency of cream of wheat. Remove
from heat and let cool while mixing the other ingredients.
Combine
flour, sugar, extract, salt and eggs in a large bowl. Add the white chocolate
mixture and stir until smooth. Pour the dough into the prepared pan.
Bake for 20
minutes, then remove the pan from the oven and sprinkle the caramel pieces
evenly over the top. Return to oven and bake another 8 to 12 minutes until
edges are golden. A toothpick in the center will always come out with paste on
the toothpick, but it will be cleaner along the edges. Be careful not to
overcook; it will brown more on the sides and bottom than on the top.
Let cool
completely before slicing into bars. They will strengthen by putting
themselves. If they don't seem to firm up, refrigerate them before slicing.
