CRAB IMPERIAL APPETIZER
Crab
Imperial is an elegant aperitif, perfect for a special occasion or an
entertaining vacation. You will be surprised at the ease of realization!
Ingredients
- ½ cup Heavy Cream
- 1 teaspoon kosher salt
- 8 oz. crab meat
- 2 tablespoons mascarpone cheese
- 3 teaspoons fresh lemon juice
- 1 dash hot sauce
- 1 teaspoon Old Bay or Cape Cod seasoning
- 2 tablespoons red bell pepper diced small
- 1 tablespoon shallot finely chopped
- 1 tablespoon chives sliced
- 2 tablespoons fresh parsley chopped
- ¾ cup brioche bread diced into 1-inch cubes
- Zest of 2 lemons
- 12 pre-baked puff pastry shells
Instructions
First, follow
the directions on your puff pastry cups and pre-cook, about 18-20 minutes.
Then, preheat
your oven to 300 ° F. (If you have just pre-cooked your puff pastry shells, you
will lower your oven temperature to 300 ° F, as they will preheat to a higher
temperature.)
In a small
bowl, combine the bread cubes and heavy cream. Let the mixture sit for 10
minutes at room temperature. Add the hot sauce and mix well.
In a medium
mixing bowl, combine all the ingredients, including the brioche bread mixture.
Be sure to check the crabmeat for shell or cartilage pieces.
Mount the
crab mixture in the pre-cooked puff pastry cups on a baking sheet. Cook 5 to 10
minutes to reheat the filling.
Garnish with
additional chives or chopped parsley if desired.
