Chocolate cherry cake
The
chocolate cake mix is combined with the cherry pie filling, eggs and almond
extract for a fluffy and tasty chocolate cherry cake with no added oil! Can be
made as a bundt cake, a sheet cake or cupcakes!
Ingredients
- 1 egg
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 c all-purpose flour
- 1 c granulated sugar
- 1 tsp vanilla
- 3/4 c buttermilk
- 3/4 c chocolate chips or chunks
- 1 1/2 tsp baking powder
- 1 1/2 c sweet dark cherries , pitted, halved
- 1/2 c unsweetened cocoa powder
- 1/2 c unsalted butter , softened to room temperature
Instructions
First, preheat
the oven to 375 degrees F.
Then, lightly
grease a 9 "springform pan. Line with parchment paper.
Grease and flour
the paper. (You can also use a 9" square pan).
Whisk
together the dry ingredients (flour, cocoa, soda, baking powder and salt). Put
aside.
Beat the
sugar and butter to obtain a light and fluffy mixture.
Add the egg
and vanilla. Beat 1 min.
Add the dry
ingredients alternately with the buttermilk.
Mix until
everything is combined.
Pour into
the mold. Sprinkle with chocolate.
Cook 25
minutes.
Arrange the
cherry halves on top of the cake. Bake 15 minutes more (the cake should not
move in the center).
Cool
completely.
Garnish with
Greek yogurt with brown sugar and fresh cherries.
