TUSCAN CHICKEN AND POTATOES
This Tuscan
chicken and potato pan is an easy and flavorful dinner idea! With tomatoes,
spinach, potatoes and a light Parmesan cream sauce, it's a perfect comfort
food.
Ingredients
- 1.5 cups Heavy cream
- 2 tbsp Oil for frying
- 2 cups Spinach
- 2 slices Bacon chopped
- 6 Chicken Thighs
- 1 teaspoon Sweet paprika
- 3 cloves Garlic minced
- 1/2 cup Parmesan Cheese grated
- Parsley for garnish
- 1/3 cup Sun-Dried Tomatoes cut into strips
- 2 cups Potatoes red or creamers, cut up in small chunks
- Salt & pepper to taste
- Cooking Spray
Instructions
First, preheat
your oven to 400 F;
Then, in a
saucepan, bring the water to a boil, add a teaspoon of salt and add the chopped
potatoes; cook for about 15 minutes, then drain and set aside.
Heat the
cooking oil in a cast iron skillet or other heavy skillet;
Season the
chicken on both sides with salt, pepper and sweet paprika;
Add the
chicken to the pan and cook on each side until golden brown for about 3-4
minutes;
Remove
chicken from pan and set aside;
Throw away
everything but a tablespoon of fat from the pan and add the garlic. Cook for
about a minute then pour the heavy cream.
Let the
cream cook for a few minutes until it thickens (about 5 minutes).
Then add the
spinach and sun-dried tomatoes and mix well;
Turn off the
heat and add the parmesan, mix until it is melted and well combined with the
sauce. Check the seasoning and add salt and pepper if necessary.
Prepare a
saucepan large enough to hold 6 chicken thighs and potatoes; spray generously
with cooking spray;
Add the
potatoes to the casserole dish; pour the sauce over the potatoes and place the
chicken on top;
Transfer the
dish to the oven and bake for 40 to 45 minutes until the chicken is cooked
through and the internal thermometer reads 165F and the potatoes are
fork-tender.
While your
chicken and potatoes are cooking, add the cut bacon to a clean pan and cook
until golden and crisp;
Once the
chicken and potatoes are cooked, remove the baking dish, sprinkle with bacon
and parsley and serve immediately.
