PISTACHIO WEDDING COOKIES
Wedding
cookies with butter and pistachio. Only six ingredients and simply delicious!
Ingredients
- 1/2 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1 3/4 cup all-purpose flour
- 1 cup confectioners sugar divided
- 1 cup 2 sticks butter, softened
- 3.4 oz package pistachio instant pudding mix
Instructions
First, in a
large bowl to mix the butter with the cream. Stir in 1/2 cup of sugar until
frothy. Add the vanilla extract.
Then, in a
medium bowl, combine the flour, pudding mixture and salt. Gradually mix the
flour mixture in the wet ingredients until everything is combined.
Divide the
dough in half and form a ball. Wrap in plastic wrap and place in the
refrigerator for at least an hour.
Preheat the
oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
Remove the
dough from the plastic wrap and make balls the size of a teaspoon. Place on
baking sheets and press on the balls, spacing them slightly about 1 inch apart.
Bake in the
preheated oven for 9 to 10 minutes. Do not overcook. Remove from the oven and
let stand on a baking sheet for about 5 minutes. While the cookies are still
hot, throw them in the sugar of the remaining confectioners and place them on a
wire rack until they are completely cooled.
Store in
airtight containers.
