PEACH COBBLER MUFFINS
These peach
cord muffins are a delicious way to use these lush, juicy stone fruits during
the season.
Ingredients
For the
muffins:
- 1 egg
- 2/3 cup white sugar
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1 1/2 teaspoon baking powder
- 1 1/4 cup all purpose flour
- 2 cups chopped fresh (or canned) peaches
For the
streusel topping:
- 1 pinch cinnamon
- 3 tablespoons cold unsalted butter
- 1/4 cup white sugar
- 1/4 cup all purpose flour
Instructions
For the
muffins:
First, preheat
your oven to 350 degrees Fahrenheit and prepare a large muffin pan with 8
muffin pans.
Then, add
the flour, baking powder, salt and sugar to a large bowl and whisk together to
combine.
Add the
peaches, reserving about 3/4 cup to garnish the muffins and toss to coat.
Add the
milk, egg and oil and stir with a rubber spatula until the flour disappears.
Divide
batter evenly among muffin tins (about 3/4 full).
For garnish:
Combine
flour, sugar and cinnamon in a small bowl and mix.
Add the cold
butter in pieces and break it with your fingers in the flour mixture until it
looks like coarse breadcrumbs.
Top the
muffins with the remaining peach pieces and a spoonful of streusel topping.
Bake at 350
degrees Fahrenheit for about 20 minutes until golden and a toothpick inserted
in one of the muffins comes out clean.
