Low Carb Greek Yoghurt Chicken
This baked
Greek yogurt chicken with cheese and bacon is a quick and easy week meal that
is healthy and delicious!
Ingredients
- 1/4 tsp salt
- 2 tbsp mayonnaise
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 cup grated parmesan cheese
- 5 oz. plain greek yogurt
- oil spray
- 1.5 lb. chicken tenders (whole) or chicken breasts (cut in quarters)
- Parsley (chopped, for garnish)
Instructions
First, preheat
the oven to 375 ° F. Lightly coat a 12-inch baking dish or 9 × 9 baking dish
with a spray of non-stick oil and set aside.
Then, in a
medium bowl, combine the Greek yogurt, mayonnaise, parmesan, garlic powder,
salt and pepper.
Add the
chicken to the bowl with the yogurt mixture and coat the mixture over the
entire chicken.
Move the
chicken to an ovenproof dish (or an ovenproof dish). The chicken should be
thinly coated with the yogurt mixture. Do not put too much or any remaining
additional mixture.
Bake 25 to
30 minutes or until chicken is cooked through.
Turn the
broiler oven and place the pan under the grill for 2-3 minutes until lightly
browned on top.
Optional:
garnish with chopped parsley.
