Loaded Cauliflower Broccoli Casserole

Ingredients
  • ½ cup sour cream
  • ½ large head broccoli, cut into florets
  • ½ cup mayonnaise
  • ¼ teaspoon black pepper
  • 1 cup sharp cheddar cheese
  • 6 tablespoons chopped fresh chives, divided
  • 1 tablespoon heavy cream
  • 8 slices of bacon, fried crispy
  • ½ large head cauliflower, cut into florets
  • 1 cup shredded colby & monterey jack cheese

Instructions

First, preheat the oven to 370 degrees.

Then, fry the bacon in a large skillet until crisp and crumble. Put aside.

Steam cauliflower and broccoli until tender, about 15 to 20 minutes.

Combine sour cream, mayonnaise, heavy cream and black pepper in a large bowl. Add the steamed cauliflower and broccoli florets, half the bacon, 1 cup strong cheddar and 3 tablespoons of chives and mix well.

Transfer to a baking dish sprayed with cooking spray and garnish with colby and monterey jack and the other half of the bacon.

Cover the dish with aluminum foil and bake for 20 minutes. Remove the aluminum foil and cook for another 5 to 10 minutes or until the cheese bubbles and begins to brown.
