LEMON SPAGHETTI WITH SPINACH
Spinach with
lemon and spinach is a wonder of a jar of creamy flavors of light lemon and
garlic that is an easy and healthy vegan meal that your whole family will love.
Ingredients
- 9 oz spaghetti
- 3 cloves of garlic, minced
- 1 teaspoon lemon zest
- salt
- red pepper flakes
- pepper
- 1 cup canned coconut milk (full fat)
- 3 cups fresh spinach
- 1 onion, chopped
- 2 1/2 cups vegetable broth
- lemon juice of 1/2 lemon
Instructions
First, in a
large saucepan, heat a little oil and sauté the onion for 3 minutes until it
becomes translucent. Then add the garlic and cook for another minute.
Then, add
the uncooked spaghetti, vegetable broth, coconut milk and lemon juice. Stir a
few times and gently push the spaghetti into the liquid when they are soft
enough (this may take a few minutes. Try not to break them when they are still
too hard). Cook 15-18 minutes.
When the
spaghetti is al dente, stir in the spinach and lemon zest. Cook for another 2
minutes and season with salt, pepper and red pepper flakes. Happy Cooking Time.
