CREAMY TOMATO SOUP RECIPE
Grilled
cheese croutons with homemade tomato soup = the ultimate comfort food for
winter This soup has no nuts or dairy products: it is creamy from mixed
chickpeas!
Ingredients
- 1 teaspoon Kosher salt
- 2 tablespoons flour
- 2 cloves garlic , minced
- 4 cups vegetable broth
- 1 yellow onion , chopped
- 3 ounces tomato paste
- 1 teaspoon sugar
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon white pepper
- 1 can (28 oz) whole peeled plum tomatoes , including the liquid
Instructions
First, add
olive oil and butter to a saucepan over medium heat.
Then, add
onion and garlic and cook 2 to 3 minutes or until translucent.
Add salt and
pepper and flour and whisk well until the flour is cooked for about 30 seconds
and fully incorporated.
Add the
broth slowly while whisking.
Add the
tomatoes, tomato paste and sugar.
Reduce the
heat to low and cook for 20 minutes.
Using an immersion
blender, mix until completely smooth.
Add the
cream and cook for another 5 minutes before serving.
