Creamy Cajun Chicken Pasta

Cajun chicken pasta come together so quickly! This easy chicken dinner recipe

Ingredients
- 1 pound linguine
- 1 red onion sliced
- 4 boneless skinless chicken breasts
- 6 tablespoons butter divided
- 8 oz mushrooms sliced
- 6 teaspoons cajun seasoning divided
- 3 bell peppers various colors, sliced
- 2 cups heavy cream
Instructions
First, rub
each chicken breast with 1 teaspoon of Cajun seasoning. Heat a large skillet
over medium-high heat. Add 3 tablespoons of butter. Sear the chicken breasts in
the butter until golden brown on each side. Reduce the heat to medium-low and
continue cooking until the chicken reaches an internal temperature of 165
degrees F, which will take about 5 to 7 minutes per side, depending on the
thickness. Remove the chicken and set aside to rest.
Then, cook
pasta according to package directions.
In the same
pan as you cooked the chicken, without cleaning, melt the remaining 3
tablespoons of butter. Add the peppers, onion and mushrooms. Sauté until
vegetables are tender. Sprinkle the remaining 2 teaspoons of Cajun seasoning
over the vegetables and cook for 1 minute.
Pour the
heavy cream and bring to a boil. Simmer until the sauce thickens.
Stir in
cooked pasta and mix until coated and vegetables are evenly distributed. Slice
the chicken breasts and serve over hot pasta.
