Boiled Pineapple Fruit Cake
A simple
recipe if you don't have time to make an "involved" fruit cake.
Ingredients
- 1 cup sugar
- 1 tsp mixed spice
- 2 eggs beaten
- 125 g butter chopped
- 1 tsp bicarbonate of soda
- 440 g (crushed) canned pineapple
- 1/2 tsp ground cinnamon
- 1 cup plain flour
- 1 cup self-raising flour
- 500 g mixed dried fruit
Method
First, place
fruit, crushed pineapple, including juice, butter, sugar and spices in a
saucepan. Boil for 5 minutes.
Then, add
baking soda. Turn off the heat and let cool.
Add the eggs
and flour.
Preheat the
oven 160C. Pour into a prepared cake pan and bake for 40 minutes or until the
top is golden.
Remove from
oven, cover with aluminum foil and bake for an additional 50 minutes. Happy
