Boiled Pineapple Fruit Cake






A simple recipe if you don't have time to make an "involved" fruit cake.

Ingredients
  • 1 cup sugar
  • 1 tsp mixed spice
  • 2 eggs beaten
  • 125 g butter chopped
  • 1 tsp bicarbonate of soda
  • 440 g (crushed) canned pineapple
  • 1/2 tsp ground cinnamon
  • 1 cup plain flour
  • 1 cup self-raising flour
  • 500 g mixed dried fruit

Method

First, place fruit, crushed pineapple, including juice, butter, sugar and spices in a saucepan. Boil for 5 minutes.

Then, add baking soda. Turn off the heat and let cool.

Add the eggs and flour.

Preheat the oven 160C. Pour into a prepared cake pan and bake for 40 minutes or until the top is golden.

Remove from oven, cover with aluminum foil and bake for an additional 50 minutes. Happy Cooking Time
