Whoopie Pie
Cake is an instant favorite not only for kids, but also for adults! This
delicious chocolate cake is filled with marshmallow butter cream! Try this easy
pie cake recipe at your next party!
Ingredients
- 4 large eggs
- 3/4 c. water
- 3/4 c. vegetable or canola oil
- 1 tsp. vanilla
- 1 c. sour cream or Greek yogurt
- 1 15.25 oz. box chocolate fudge cake mix
- 1 3.9 oz. box instant chocolate fudge pudding mix
Marshmallow
Creme Filling:
- 1 1/2 tsp. vanilla
- 2 c. powdered sugar
- 1 7 oz. carton marshmallow creme
- 10 Tbl. unsalted butter room temperature
- pinch of salt
Chocolate
Ganache:
- 3 Tbl. whipping cream
- 1/2 c. chocolate chips I used milk chocolate
Instructions
First, preheat
the oven to 350 degrees. For the cake: grease and flour a 12-cup mold; put
aside. In a large bowl, combine the dry cake mix, dry pudding mix, water, oil,
eggs, sour cream and vanilla. Using a hand mixer, mix until all ingredients are
fully incorporated and the mixture is smooth. Pour the dough into the prepared
pan and spread evenly. It is a very thick paste. Bake for 45 minutes or until a
toothpick inserted in the center comes out clean. Remove from the oven and let
cool in the mold for 10 minutes, then invert on a rack and cool completely.
Once the cake has cooled, cut in half horizontally.
Then, for
the marshmallow cream filling: In a large bowl, using a hand mixer, mix the
butter until smooth. Add the marshmallow cream, salt and vanilla and mix until
smooth. Add a cup of powdered sugar and mix until well blended. Add the rest of
a cup of powdered sugar and mix until smooth and creamy. Spread the filling on
the bottom half of the cake and place the top half of the cake on the cream
filling.
For the
chocolate ganache: Place the chocolate chips in a small bowl; put aside.
Whipping cream in the microwave in a small microwave-safe dish until it begins
to bubble. Pour the hot cream over the chocolate chips and let sit for 5
minutes. Mix until smooth and creamy. If the chocolate chips are not completely
melted. Place in the microwave and heat, stirring every 10 seconds, until the
mixture is smooth and the chocolate is melted. Let cool 10 minutes or until
slightly thickened and pour over the cake. Store the cake in the refrigerator.
Bring to room temperature before serving.
