Vegan Zucchini Brownies
Rich and
fluffy vegan zucchini brownies with a dark chocolate filling. Mega-chocolate
and so easy to prepare, and you will never know that they contain zucchini!
Ingredients
- 1/4 cup neutral oil
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- 1 cup whole wheat flour
- 1 1/2 teaspoon baking powder
- 3/4 cup coconut sugar
- 1/2 cup mini dairy-free chocolate chips
- 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
- 1/3 cup cocoa/cacao powder
- 1 cups peeled, finely grated and coarsely chopped zucchini
Instructions
First, preheat
your oven to 350 degrees and grease an 8x8 pan. Put aside.
Then, in a
small bowl, prepare your flax eggs by whisking 2 tablespoons of ground flax
seeds with 6 tablespoons of warm water. Set aside to thicken.
In a larger
bowl, whisk the coconut sugar, oil and vanilla until well blended. Add the
thickened flax eggs and mix again.
Add the
flour, cocoa powder, baking powder and salt and stir until everything is well
mixed.
Finally add
the grated zucchini and mini chocolate chips and stir to incorporate
everything. I really recommend grating your zucchini as thinly as possible and
coarsely chopping them so that you don't have long streaks of zucchini in your
brownies.
Pour the
batter into your prepared baking dish and bake for about 20-25 minutes or until
a toothpick inserted in the center comes out clean.
Let the
brownies cool down a bit after cooking, then cut them into squares and serve.
