THE BEST TWICE BAKED POTATOES

Potato Recipe Twice - One of my favorite side dishes ever! These twice baked
potatoes make the perfect aperitif and are a real pleasure for the crowd! So
easy and delicious!
INGREDIENTS
- 1/4 cup milk
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 tablespoons butter, melted
- 3/4 cup sour cream
- 1/4 teaspoon thyme
- 2 green onions, chopped
- 2 ounces cream cheese, softened
- 3/4 cup grated Cheddar cheese
- Paprika
- 4 baking potatoes, about 2 pounds
INSTRUCTIONS
First, poke
potatoes once with a knife and bake at 400 degrees for 1 hour or until tender.
Then, once
cooled enough to handle, cut the potatoes in half lengthwise and place them
inside and place in a large mixing bowl. (Leave about a quarter of an inch of
the flesh of the potato still intact on the edges.) Put the skins in a large
baking dish.
Add sour
cream, butter, cream cheese, onions, salt, pepper, thyme and milk to the
potatoes and puree until light and smooth, adding more milk if necessary . Stir
in the cheese and spoon mixture into the skins. Sprinkle with paprika for
garnish.
Refrigerate
until ready to cook. Bake for 20 minutes at 350 degrees F.
