THE BEST TWICE BAKED POTATOES

BEST Bake Potato Recipe Twice - One of my favorite side dishes ever! These twice baked potatoes make the perfect aperitif and are a real pleasure for the crowd! So easy and delicious!

INGREDIENTS
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 6 tablespoons butter, melted
  • 3/4 cup sour cream
  • 1/4 teaspoon thyme
  • 2 green onions, chopped
  • 2 ounces cream cheese, softened
  • 3/4 cup grated Cheddar cheese
  • Paprika
  • 4 baking potatoes, about 2 pounds

INSTRUCTIONS

First, poke potatoes once with a knife and bake at 400 degrees for 1 hour or until tender.

Then, once cooled enough to handle, cut the potatoes in half lengthwise and place them inside and place in a large mixing bowl. (Leave about a quarter of an inch of the flesh of the potato still intact on the edges.) Put the skins in a large baking dish.

Add sour cream, butter, cream cheese, onions, salt, pepper, thyme and milk to the potatoes and puree until light and smooth, adding more milk if necessary . Stir in the cheese and spoon mixture into the skins. Sprinkle with paprika for garnish.

Refrigerate until ready to cook. Bake for 20 minutes at 350 degrees F.

Happy Cooking Time.
