OLD FASHIONED SOFT MOLASSES COOKIES
These
seriously soft molasses biscuits are the softest and most tender ginger
biscuits!
Ingredients
- 1 Large Egg
- 1/4 Cup Dark Molasses
- 2 Teaspoons Baking Soda
- 1 Teaspoon Vanilla Extract
- 1 Cup Butter, Softened
- 1 Teaspoon Ground Ginger
- 1/2 Teaspoon Salt
- 1/4 Cup Granulated Sugar, For Rolling
- 2 1/2 Cups All Purpose Flour
- 1 Cup Packed Brown Sugar
- 1 Teaspoon Ground Cinnamon
Instructions
First, preheat
the oven to 325 degrees. Prepare a large baking sheet with parchment paper or
nonstick cooking spray, set aside.
Then, in a
large bowl with a hand-held mixer or in the bowl of your stand mixer with
paddle, whisk together brown sugar, butter, molasses, egg and vanilla.
Stir in
flour, baking soda, cinnamon, ginger and salt.
Shape the
dough with rounded soup spoons into 1 1/2 inch balls. Dip the cookies in the
granulated sugar and place them 2 inches apart on the prepared baking sheet.
Bake in
preheated oven for 13-15 minutes until mixture is cooked. Remove the cookies on
a rack so they cool immediately.
