Baked Creamy Corn Casserole






Whether it's a side dish or a main course, this creamy and creamy creamy cornmeal casserole is a big favorite in the family!

Ingredients
  • 3 large eggs
  • 2 teaspoons sugar
  • 1/4 cup flour
  • 1/4 teaspoon pepper, or to taste
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon garlic powder
  • 4 tablespoons melted butter
  • 1 can Libby's Whole Kernel Sweet Corn
  • 1/3 cup crushed buttery crackers
  • 1/2 cup finely grated parmesan cheese
  • 2 cans Libby's Cream Style Canned Corn
  • grated parmesan (the canned kind) optional

Instructions

First, preheat the oven to 350 degrees and grease a baking dish.

Then, in large bowl, combine corn with cream, whole grain corn, flour, eggs, salt, pepper, garlic powder and sugar. Pour the mixture into a prepared baking dish. Sprinkle with parmesan cheese.

Bake in preheated oven for 35 to 40 minutes. (Remove from oven, sprinkle with crushed crackers, then drizzle with melted butter.)

Bake for another 5 minutes until the cookies are golden brown. Let cool slightly before serving. Garnish with grated parmesan, if desired.
