Maple bacon biscuits






Maple bacon biscuits






A savory, sweet and spicy cookie topped with cinnamon maple butter! If you don't want to cut a hot pepper by hand, you can choose to use green peppers in a box.

Ingredients
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups buttermilk
  • 4 teaspoons baking powder
  • 2 tablespoons chives
  • 1 cup shredded cheddar cheese
  • 4 tablespoons maple syrup
  • 4 cups all-purpose flour
  • 12 tablespoons butter cold
  • 8 slices bacon cooked, and chopped into small pieces

For topping:
  • 2 tablespoon maple syrup
  • 3 tablespoons melted butter

Instructions

First, in a large bowl, combine the flour, baking powder, baking soda and salt.

Then, combine chives, cheese and chopped bacon.

With a cheese grater, grate the cold butter. If you don't have a box grater, just cut it into small pieces.

Add the butter to the flour mixture and stir until it looks like coarse breadcrumbs or a very soft dough.

In a medium bowl, whisk together the buttermilk and maple syrup.

Add the buttermilk mixture to the batter and stir until well blended.

Empty the dough onto a lightly floured mixture and knead lightly to obtain the completely combined dough.

Spread out in a rectangle about 1 1/2 "thick.

Using a cookie cutter, cookie cutter or pizza cutter, cut ~ 12 cookies into the dough. Note: The number of cookies will depend on the size of your cookie cutter, but it should be between 10 and 12.

Place on a baking sheet lined with parchment paper and freeze for 15 minutes.

Meanwhile, preheat the oven to 450 degrees F.

Before cooking, combine the melted butter and maple syrup in a small bowl.

Brush the cookies before baking. There should be leftovers that will be used after cooking. 

Bake the cookies in the preheated oven for 14 to 16 minutes, until golden.

Immediately after cooking, brush with more butter / maple syrup mixture.
