CHOCOLATE CHIP CLOUDS
The
chocolate chip clouds have the perfect crisp, chewy texture. A delicious recipe
for keto cookies, perfect for a surprise baby shower!
INGREDIENTS
- 1/2 cup sugar
- 1/8 tsp cream of tartar
- 1 tsp vanilla extract
- 1 cup chocolate chips
- 2 tbsp unsweetened cocoa powder
- 1/2 cup egg whites, room temperature
INSTRUCTIONS
First, heat
the oven to 300 ° F. Cover the cookie sheet with a silpat or non-stick silicone
pad.
Then, using
a blender, beat the egg whites and cream of tartar in a large bowl at high
speed until soft peaks form. Gradually add the sugar a little at a time, then
the vanilla, beating well after each addition until firm peaks are obtained,
the sugar is dissolved and the mixture is shiny.
Sift the
cocoa over the egg white mixture; fold gently until everything is combined.
Add the
chocolate chips. Place the mixture by placing tablespoons on a cookie sheet.
Makes 30 to 32 cookies.
Cook 34 to
40 minutes or just until dry. Let cool slightly; remove from cookie sheet. Let
cool completely on a wire rack. Store covered at room temperature. Happy
