Easy Lemon Crackle Cookies
These lemon
crumble cookies are perfect for a light, sweet and refreshing flavor. They are
made from scratch and are so sweet and delicious! This will become a new
instant favorite!
Ingredients
- 1/2 tsp salt
- 1 large egg
- 1 cup + 2 Tbsp granulated sugar
- 1 large egg yolk
- 3/4 tsp lemon extract
- 10 Tbsp unsalted butter , softened
- 2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 cup powdered sugar
- 1 1/2 Tbsp fresh lemon juice
- 5 drops yellow food coloring (optional)
- 2 cups all-purpose flour (scoop and level to measure)
- 1 Tbsp lemon zest (from about 2 medium lemons)
Instructions
First, preheat
the oven to 350 degrees. In a bowl, combine the flour, baking powder and salt.
Then, in the
bowl of an electric mixer with the blade attachment, beat the butter, sugar and
lemon zest until light and fluffy (occasionally scrape the bowl all the way
through the mixing process). if you do not use a shovel attachment that
constantly scrapes the bowl).
Stir the egg
and then incorporate the egg yolk. Add lemon juice, lemon extract, vanilla
extract and optional yellow food coloring and mix until well blended. With the
mixer set to low speed, slowly add the dry ingredients and mix until well
blended.
Pour the
caster sugar into a small bowl. Pour the dough about 1 1/2 tablespoons at a
time (25 g each) and shape into a ball, then place in the powdered sugar and
roll to coat well.
Transfer to
parchment paper or baking sheet lined with Silpat, repeat with remaining dough
and space cookies 2 inches apart on baking sheet. Bake in preheated oven for 10
to 13 minutes.
Let cool on
a baking sheet for several minutes, then transfer to a rack to cool. Happy
