Cheesy Asparagus Casserole
Asparagus

Ingredients
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 teaspoon pepper
- 1 cup crushed potato chips
- 1/4 cup butter, cubed
- 6 hard-boiled large eggs, sliced
- 2 cups whole milk or half-and-half cream
- 2 pounds fresh asparagus, trimmed, cut into 1-inch pieces
- 1 cup Kerrygold shredded cheddar cheese
Instructions
First, in a
large saucepan, bring 1/2 inch of water to a boil. Add the asparagus; cover and
boil for 3 minutes or until crisp tenderness. Drain well; put aside.
Then, in a
large saucepan over medium heat, melt the butter. Stir in flour until smooth.
Gradually add the milk. Bring to a boil over medium heat; cook and stir for 2
minutes or until thickened. Add salt and pepper.
In an
ungreased 11x7 inch. baking dish, spread half of the asparagus. Cover with half
of the eggs, cheese and sauce. Repeat the layers. Sprinkle with potato chips.
Bake
uncovered at 350 ° C for 30 minutes or until everything is hot.
