CAPRESE BALSAMIC GRILLED CHICKEN
Grilled
chicken caprese, with fluffy and creamy Buffalo mozzarella slices will become a
family favorite barbecue recipe! A low-carb lunch or dinner!
INGREDIENTS
BALSAMIC
GRILLED CHICKEN
- 2 teaspoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- 1 tablespoon pesto
- 1 pound boneless skinless chicken breasts

INGREDIENTS
- 8 basil leaves
- 1 large or 2 small tomatoes, cut into 8 slices
- 8 slices fresh mozzarella cheese
INSTRUCTIONS
First, whisk
together all the ingredients for the grilled balsamic chicken. Put the chicken
breasts in a freezer bag and pour the marinade over it. Squeeze the air out of
the bag, seal it and massage the marinade into the chicken. Refrigerate at
least 4 hours or overnight.
Then, preheat
grill to medium-high and oil grates. When the grill is hot, place the marinated
chicken on top and grill for 4 to 6 minutes on each side or until the internal
temperature reaches 165 ° F.
During the
last two minutes of cooking, spread 2 slices of tomatoes, 2 basil leaves and 2
slices of mozzarella on each chicken breast. When the cheese is melted, remove
