MARRY ME CHICKEN







Bride me chicken. Fried chicken famous in a cream sauce of parmesan-dried tomatoes with fresh basil. This will definitely inspire the wedding proposals!

Ingredients
  • ¼ cup diced onion
  • 4 Chicken thighs (bone-in with skin)
  • ¾ cup chicken broth
  • 1 cup sliced mushrooms
  • ¼ cup white wine
  • ¼ tsp. white pepper
  • ½ tsp. sea salt
  • ½ cup artichoke hearts (chopped)
  • 8 kalamata olives (sliced in half)
  • 3 cloves garlic (slivered)
  • 2 tsp. capers (optional)
  • 3/4 cup half and half (or heavy cream)
  • ¼ cup parmesan cheese
  • ¼ cup feta cheese (crumbled)
  • 3 T. sun-dried tomatoes (chopped)
  • 2 T. Italian parsley or basil (chopped)
  • 1 tsp. avocado oil (or favorite oil)
  • ¾ tsp. crushed red pepper flakes (or to taste)

Instructions

First, Season the chicken with salt and pepper.

Then, Heat the oil in a deep saucepan and brown the chicken thighs, fat side first, for four minutes on each side or until golden brown. Remove the chicken from the pan and set aside.

Drain the chicken fat from the pan and put 2 tablespoons of fat, or use more avocado oil. Sauté the onions and mushrooms for a minute. Add the garlic and sauté for 30 seconds.

Deglaze with chicken broth and wine. Add the artichoke hearts, the sundried tomatoes, the black olives, the capers and the red pepper flakes. 
Simmer for five minutes over low heat.

Add the cream and parmesan. Put the chicken legs back into the pan, skin up. Cover and simmer another 20 minutes or until chicken is completely cooked.

Prepare fresh pasta using the recipe from this blog or make four servings of pasta purchased in-store.

Divide the pasta in four plates. Smother with the sauce, add the chicken and sprinkle with chopped feta cheese and chopped fresh basil or parsley. Happy Cooking Time.
