Maple Bacon Sweet Potato Hash
A delicious
sweet and savory dish that goes very well with eggs for breakfast or as a side
dish for dinner!
Ingredients
- 1/2 teaspoon cinnamon
- 1 Tablespoon pure maple syrup
- 1 lb bacon diced into bite sized pieces
- 4 cups sweet potatoes * bite-size, from 2-3 medium sweet potatoes
Instructions
First, Add
the bacon in a large pan and set the heat on medium.
Then, Cook
the bacon, stirring occasionally, until it is thoroughly cooked and begins to
crisp - about 5-15 minutes, depending on the thickness of the bacon.
Using a
spoon to drain, remove the bacon on a paper towel-lined plate and set aside.
Carefully
drain the whole tablespoon of bacon fat except 2 tablespoons and put it back on
top of the stove.
Add the
diced sweet potatoes to the pan and sprinkle with cinnamon.
Cook until
sweet potatoes are 10-15 minutes, stirring frequently, or until tender.
Stir bacon
cooked in sweet potatoes and add maple syrup.
