  • ½ cup shortening
  • 3 cups cake flour
  • 6 eggs room temperature
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup butter unsalted, room temperature
  • 2 cups brown sugar firmly packed
  • 2 teaspoons vanilla extract
  • 1 cup evaporated milk
  • 1 cup chopped pecans toasted, optional

FOR BROWN SUGAR GLAZE:
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • ½ cup chopped toasted pecans optional
  • ¼ cup salted butter
  • ½ cup light brown sugar firmly packed

INSTRUCTIONS
FOR CAKE:

First, Grease and flour the dish (s) or spray Baking Spray.

Then, Place the butter and fat in the bowl of an electric mixer. Beat on medium speed until creamy. Gradually add the sugars and beat until the mixture is light and fluffy. Add the eggs, one at a time. Beat, after each addition, until they are incorporated.

In large bowl, sift flour, baking powder and salt.

In a small measuring cup, mix the milk and vanilla.

Add the flour to the butter / sugar mixture, alternating with the milk / vanilla mixture. Start and finish with the flour mixture.

Add the pecans, if you use.

Place the pan on the middle rack in a cold oven and set the temperature to 300 ° F.

Bake 1 hour 10 minutes, test with a toothpick and check every 5 minutes thereafter. The cake is cooked when the toothpick inserted in the middle comes out with only a few crumbs.

Transfer the baked cake to a cooling rack for 10-15 minutes. Remove from pan and let cool completely on the rack.

Dust cake with powdered sugar or with glaze.

GLAZE

Melt the butter in a medium saucepan over medium-low heat. Add the brown sugar and cook for 2 minutes, whisking constantly. Continue to whisk and add the milk. Bring to a boil. Remove the pan from the heat and add the vanilla. Add powdered sugar in ¼ cup increments by whisking after each addition. Whisk until the drizzle is creamy and smooth. (Add more milk, if necessary, to the desired thickness.) Pour ice on the cooled cake. Sprinkle with roasted pecans, if desired.

Happy Cooking Time.
