Low Carb Chicken Divan
The Low Carb
Divan chicken is rich and creamy with broccoli, cheddar and a hint of curry. It
is the ultimate comfort food. Serve it alone or with a garden salad for an easy
main course
Ingredients
- 1 cup chicken broth
- 1 onion, chopped
- 1/2 tsp garlic salt
- 2 boneless, skinless chicken breasts, cooked and chopped
- 1 tsp lemon juice
- 3 cups cauliflower rice
- 1/2 cup mayonnaise
- 1 tbsp butter
- 3 cups broccoli, steamed
- 1 cup heavy cream
- 1/2 tbsp garlic, minced
- 2 cups cheddar cheese, shredded
- 1 tsp parsley, chopped, for garnish (optional)
Instructions
First, Preheat
the oven to 350F.
Then, In a
large skillet, melt the butter over medium heat. Add onions and garlic and cook
until onion is softened. Add salt to garlic. Add the cauliflower rice.
Cook until
cauliflower is softened. Stir in chicken broth and cook covered for 10 minutes.
Stir in the
heavy cream and lemon juice. Reduce the heat to medium-low.
Simmer 10 minutes.
Add mayonnaise and remove from heat.
Add half of
the chicken to the cauliflower mixture. Spread the other half of the chicken in
the bottom of an 8x8 gratin dish. Add the broccoli. Cover with cauliflower
mixture. Cover with cheddar cheese. Cover the casserole and bake for 30
minutes.
Remove the
lid and cook for another 10 minutes. Serve hot. Sprinkle with parsley if
