Glazed Lemon Blueberry Muffins
Blueberry
and lemon muffins are very special with sweet and tangy lemon glaze.
Ingredients
For the
Muffins
- ½ cup sugar
- 1 egg
- ½ teaspoon sea salt
- ¼ cup coconut oil
- 1 tablespoon lemon zest
- 3 teaspoons baking powder
- 1 cup milk I used 2 percent
- 2 1/2 teaspoons lemon juice
- 2 cups all-purpose flour
- 6 oz fresh blueberries washed and any stems removed
For the
Glaze
- 2 tablespoons fresh lemon juice
- 1/4 cup powdered sugar
Instructions
First, Preheat
the oven to 400.
Then, In a
large bowl, combine flour, sugar, sea salt and baking powder and set aside.
In a small
bowl, lightly beat the egg and incorporate the coconut oil, milk and lemon
zest.
Stir in the
lemon juice
Pour the
liquid mixture into the flour mixture and mix with a hand mixer until the dough
is smooth
Stir in the
blueberries
Pour the
batter into the filled muffin pans and bake for 15 to 18 minutes or until a
toothpick inserted in the center of the muffins comes out clean.
Remove from
oven and set aside
In a small
bowl, mix the lemon juice with the caster sugar and lightly place the frosting
on top of the muffins.
