Cinnamon Apple Crumble Cake
This cake is
loaded with apples, is a crazy butter and is crowned with the best cinnamon
crumble of all time.
INGREDIENTS:
CRUMB
TOPPING:
- 2 teaspoons cinnamon
- 1 ¼ cup all purpose flour
- 1/3 cup light brown sugar
- 1/3 cup granulated sugar
- ½ cup butter, melted (see notes)
- ½ cup chopped California Walnuts
CAKE:
- ½ teaspoon baking soda
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon baking powder
- 2 tablespoons milk
- 2 cups all purpose flour
- ½ cup butter, room temperature (see notes)
- ¼ cup greek yogurt
- 1 tablespoon vanilla extract
- 2 medium apples, quartered, cored and thinly sliced (such as granny smith and pink lady)
DIRECTIONS:
CRUMB TRIM:
In a medium bowl, combine walnuts, flour, brown sugar, caster sugar and
cinnamon whisk with a fork. Use the fork to stir while you pour the melted
butter. You will notice that the crumbs begin to form. Break the huge crumbs
with the fork. Place the bowl in the refrigerator while you prepare the dough.
Place a rack
in the center of the oven and preheat oven to 350 ° F. Spray a 9-inch spring
dish with cooking spray, reserve.
CAKE: In
medium bowl, whisk together flour, baking powder and baking soda. In the
electric mixer bowl, beat the butter for 2 minutes until light and fluffy. Add
sugar and vanilla and continue beating for another 1-2 minutes. Add the eggs,
one at a time, until each is incorporated before adding the next one. Stop the
blender and scrape the sides. With the low speed blender, add the dry
ingredients in three editions alternating with the Greek yogurt the first time
and the milk a second time. Do not mix too much. The dough should be quite
thick and it's okay if it has some lumps.
Spread the
dough in the prepared pan. Garnish with apple slices, then breadcrumbs and bake
for 45 to 55 minutes or until a skewer inserted in the center of the cake comes
out clean (or with only a few crumbs). Allow to cool for 15-20 minutes before
removing from the hinged mold. Happy Cooking Time.
