Christmas Salad






Christmas Salad







This healthy and delicious salad is perfect for holidays or any time of the year. Filled with green vegetables, fresh cranberries, tangerines, coconut and an orange vinaigrette.

Ingredients

FOR THE SALAD
  • 2 pomegranates seeded
  • 2 green pears peeled and sliced
  • 1 cup parmesan cheese grated
  • mixed greens (green leaf, red leaf or romaine) (only two heads of lettuce needed), chopped and washed
  • 1 cup almonds toasted and candied
  • 1 pound bacon cooked and crumbled
  • 2 tablespoons sugar for the almonds
  • 2 red pears peeled and sliced

FOR THE SALAD DRESSING
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 3/4 cup oil
  • 1 teaspoon dried mustard
  • 1 teaspoon poppy seeds
  • 2 tablespoons dried onion flakes
  • 1/2 cup red wine vinegar

Instructions

First, In a hot, dry skillet, grill sliced almonds until lightly browned and fragrant. Add 2 tablespoons sugar and stir until well coated. Remove the almonds from the pan and let cool. Almonds can be stored at room temperature in a covered dish until ready to use.

Then, Sow the pomegranates in a bowl of water. The seeds will fall to the bottom and the red and yellow bowels will float up. Remove pomegranate seeds from the water and refrigerate until ready to use.

Prepare the vinaigrette:

Add all the ingredients of the vinaigrette to a bowl and whisk.

In a large salad bowl, add green vegetables, minced pears, pomegranate seeds, crumbled bacon, parmesan cheese and roasted candied almonds.

Sprinkle and mix the salad with the vinaigrette.
