CHICKEN KATSU
Katsu
Chicken is a crispy fried chicken prepared with Panko breadcrumbs and dipped in
a curry sauce with ginger and sweet garlic, ready in less than 45 minutes!
Ingredients

Katsu
- 1 teaspoon salt
- 2 large eggs, beaten
- 1/4 teaspoon pepper
- 1 cup panko bread crumbs
- Neutral oil, such as vegetable
- 3 chicken breasts
- 1/2 cup all-purpose flour
Tonkatsu
Sauce
- 1 teaspoon mirin
- 1 tablespoon soy sauce
- 1/4 teaspoon dijon mustard
- 1/4 cup ketchup
- 1 tablespoon worchestershire sauce
Instructions
First, Take
one of the chicken breasts and cut it parallel to the cutting board so that it
forms two thin strips of chicken. Cut each of these pieces in half to find you
with four small cuts of chicken. Repeat with each of the chicken breasts.
Season each piece of chicken with salt and pepper.
Then, Transfer
each piece of chicken into the flour, egg, then panko breadcrumbs. Make sure
the chicken is fully coated at each step, especially when covering it with
panko.
In a small
bowl, mix all the ingredients of the sauce and mix well. Put aside.
Fill a pan
with 1/2 inch of the neutral oil of your choice and bring it to 350 degrees. To
keep the temperature constant, I suggest using a food thermometer.
Once the oil
is hot enough, place 2 to 3 pieces of chicken at a time and cook until one side
is golden brown before turning it over. Once the other side is also brown,
remove it and place it on a plate covered with a paper towel or a cooling rack.
Repeat until all pieces of chicken are cooked.
Serve the
chicken on rice with a drizzle of sauce.
