Melt in Your Mouth Chicken
Using only 6
ingredients, this chicken is ready in no time, but full of flavor!
Ingredients
- 1 tsp garlic powder
- 1 tsp seasoning salt
- 1 cup mayonnaise (or Greek yogurt for a healthier option)
- 4 boneless, skinless chicken breasts trimmed of excess fat
- 1/2 tsp black pepper
- 1 cup parmesan cheese (or sharp Cheddar, or Asiago) divided
Instructions
First, Cut
each chicken breast into 3 large pieces or strips. Place the chicken breast
strips / pieces in a bowl of milk / buttermilk. Soak for 20-30 min or
overnight.
Then, Preheat
the oven to 375 F. In a small bowl, mix the mayonnaise, 1/2 cup parmesan cheese
and seasonings.
Place the
chicken in a 9x13 baking dish and spread the mixture evenly over the chicken
breasts and sprinkle with remaining Parmesan cheese.
Bake for
about 40 to 45 minutes, or until done. You can also finish them under the grill
for a minute or two to brown them further.
Serve with a
vegetable like those delicious fresh broccoli that I steamed.
Season with a
drizzle of fresh parsley, if desired.
