LEMON BUTTER CHICKEN
A delicious
chicken with lemon butter. Chicken seasoned in a creamy lemon butter sauce that
will surely delight.
Ingredients
- 1 cup chicken broth
- 1 tablespoon smoked paprika
- 8 bone-in, skin-on chicken thighs
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- Juice of 1 lemon
- 1/4 cup freshly grated Parmesan
- 2 cups baby spinach, chopped
- 1 teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 3 tablespoons unsalted butter, divided
DIRECTIONS:
First, Preheat
oven to 400 degrees F.
Then, Season
chicken legs with paprika, salt and pepper to taste.
Melt 2
tablespoons butter in a large ovenproof skillet over medium-high heat. Add
chicken, skin down, and sear on both sides until golden, about 2-3 minutes per
side; drain excess fat and set aside.
Melt the
rest of the tablespoon of butter in the pan. Add garlic and cook, stirring
frequently, until fragrant, about 1 to 2 minutes. Stir in chicken broth, heavy
cream, parmesan cheese, lemon juice and thyme.
Bring to a
boil; reduce heat, stir in spinach and simmer until spinach has faded and sauce
has thickened slightly, about 3 to 5 minutes. Return the chicken to the pan.
Place in the
oven and roast until fully cooked, reaching an internal temperature of 165
degrees F, about 25-30 minutes.
